Fudgy Mint Brownies for St. Patrick's Day!

I am so fortunate to have a grandmother who has such great recipes that I grew up enjoying, that I’ve now been able to re-create into my own! {I also want to give her a special shout-out… she has reached the 50 pound weight loss mark and I couldn’t be more proud!! I know how hard it is, and am just thrilled for her!}

These delicious brownies are sure to be a hit with your family, friends, and whoever else is lucky enough to enjoy them! The dense and moist brownie topped off with a mint and fudge swirl makes for a scrumptious treat!

Now onto the recipe… this will definitely brighten up your dessert table! Be sure to serve with an ice cold glass of milk!

Fudgy Mint Brownies

Fudgy Mint Brownies

Ingredients

  • 1 c. sugar
  • 1 c. plus 6 T butter
  • 4 eggs, beaten
  • 1 c. flour
  • 1/2 tsp. salt
  • 16 oz. Hershey's Chocolate Syrup
  • 1 tsp. vanilla
  • 2 c. powdered sugar
  • 3 T green Creme de Menthe
  • 1 1/2 c. semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. Cream 1/2 c. butter and sugar in the bowl of an electric mixer.
  3. Add eggs, flour, salt, chocolate syrup, and vanilla. Blend well.
  4. Pour into a greased 13x9 pan.
  5. Bake for 30-35 minutes.
  6. While the brownies are baking, mix powdered sugar, 1/2 c. butter, and Creme de Menthe.
  7. Let the brownies cool. Once cooled, spread over brownies.
  8. Melt chocolate chips and 6 T butter together. Cool mixture, then spread over brownies.
  9. Chill for 2 hours.
  10. Cut into squares and serve with an ice cold glass of milk!

Notes

If you don't have green Creme de Menthe on hand, use regular Creme de Menthe and a few drops of green food coloring!
